                                        End of term Recipe

Fruit and Oat Cookies

One of my recipes for you to have a go at over the summer …

Here’s what’s in them …

175g               Plain flour

15g                 Baking powder

55g                 Porridge oats

115g           Butter or margarine

115g Sugar

100g               Sultanas, chopped dates or glace cherries

25g                 Golden syrup

 

Here’s how to do it ….

1)      Pre-heat the oven to 180C/350F/Gas mark 4.

2)     Put the flour, baking powder and oats into a large mixing bowl and rub in the butter or margarine until the mixture looks like breadcrumbs.

3)     Add the sugar, dried fruit and syrup and continue mixing until it comes together in a sticky lump.

4)     Place the cookie dough onto a lightly floured surface and roll into a sausage.

5)     Slice into cookies (8 large or 12 smaller ones) and put the cookies onto a greased baking tray.

6)     Bake for 15 minutes or until pale brown and cooked.

7)     Sit down, make a cup of tea and enjoy!
